Scrambled eggs with FRANK’S (grr); fruit; coffee

Healthier eating started today, so no potatoes with breakfast. The thought of eating those crappy scrambled eggs by themselves bummed me out though, so I grabbed some fruit to go with (this was a mixture of grapes, honeydew, pineapple, raspberries, and blackberries). I’ve also been drinking my coffee darker because I bought a different creamer (Califia Farms vanilla almond milk with coconut cream creamer which is a crazy mouthful), and I’m pretty sure that the container says unsweetened, but it’s definitely kinda sweet and I’m not digging it. So I just add a tiny dash. I’m also confused, because Califia Farms has about 50 different types of almond milk creamers that seem to be the same but apparently aren’t.

After my abnormally socially active weekend, I was STRUGGLING HARD this morning. By mid-morning, I could barely keep my eyes open, so I was thrilled when my co-worker announced she was making a Starbucks run.

Salad; orange

Since I hadn’t cooked over the weekend, I didn’t have anything to bring for lunch today. I went with my usual salad (romaine, broccoli, carrots, pico, black beans, 1/2 a hard boiled egg, black olives, croutons, salmon, balsamic vinaigrette), and grabbed an orange to round out my meal.

Veggie-loaded breakfast casserole with half an avocado

Dinner ended up being on the late side tonight – I needed to run to the grocery store to grab eggs, and then spent some time catching up with Jeff who had returned from his trip earlier in the afternoon. This breakfast casserole is one of my favorite quick “use up what’s in the fridge” meals – it’s just eggs baked with a hashbrown “crust,” with a ton of veggies and a little cheese. I know it doesn’t look very pretty, but it requires little prep, reheats really well, tastes yummy, and is pretty nutritious (it’s really more veggies than anything else). I’ll be writing this one up within the next few days.

That’s it – kind of a boring food day, I know. Lots of eggs…? My body is used to overeating, so I’m going to try to let myself feel a little hungry over the next couple of weeks to retrain myself to eat intuitively. We’ll, uh…we’ll see how that goes.
